'A Date with Cognac' Dessert ~ Γλυκό του Κουταλιού Χουρμάς

Spoon sweets are maybe the most popular and traditional desserts in Greece. They are made by boiling fruit in syrup. The more traditional ones are made with cherries, figs, oranges and grapes. Nevertheless they can be made by most of the fruit even watermelons! As I was growing up to my surprise I was introduced to new flavours such as chestnuts, walnuts and tomatoes, eggplants. My favourite I think is the chestnut one and the second favourite watermelon.
To my surprise my aunt introduced me to a simpler and easier version of a date spoon sweet. Dates are already mature and sweet fruits so they don't need as much time cooking like the rest of the fruit.
Thus this version of a spoon dessert can be prepared as a last minute option.

Ingredients:
125 g brown sugar
250 g dates
1/2 cup cognac
1 cup made strong filtered coffee

We add all the ingredients in a small pan and we bring to boil. Once it is boiling we lower the temperature to medium and we let it simmer until it becomes syrupy. While it boils the skin of the dates will start to separate. As it separates we peel it from the dates and remove it. Once it gets syrupy we let it cool down and we serve either with vanilla ice cream or as it is.
