Everyone loves pizza and everyone agrees that it is really fatty and heavy for the stomach. Well my aunt came up with a good idea to have a lighter version of pizza. The idea was to substitute the dough with courgette. I loved it! Of course it doesn't taste exactly like a good old Italian pizza but for those that are either on a diet, love veggies or want a light version of pizza it is perfect!
Ingredients:
3 thick courgettes
1 canned tomato
2 cups grated cheese (any type we want)
4 slices of bacon
Pepper, oregano and olive oil
We start by sprinkling some olive oil on a baking tray. We cut the courgettes in slices, place them on the baking tray and bake them under a medium grill for about 20 minutes or until they are almost done.
In the meantime we cut the bacon in small cubes. We mix the cheese and bacon in a bowl and add some pepper.
When we take the courgettes out of the oven we let them cool for a bit before we move to the first step. After they cool down we use then as a pizza base. On each slice we spoon a teaspoon of canned tomato and top with the cheese and bacon mixture. We can decorate we either a piece of tomato or an olive slice.
