Delicious Zucchini Burgers ~ Κολοκυθοκεφτέδες της Μανούλας Ναυσικάς!
Not a fan of zucchini? Well this is the perfect recipe for you!No I am not playing games as this recipe has been adored by people that really love, don't really care about or hate zucchini! 'A Date with Cognac' Dessert ~ Γλυκό του Κουταλιού Χουρμάς
Spoon sweets are maybe the most popular and traditional desserts in Greece. They are made by boiling fruit in syrup. The more traditional ones are made with cherries, figs, oranges and grapes. Marie Biscuit Chocolate Pudding Recipe ~ Κορμός Σοκολάτας
This pudding is one of the most common desserts of Greek households.
Historically Marie biscuit chocolate pudding has come out of the fusion of Sri Lankan and British cuisine. Here I will give you one of the Greek variations. There are a few different ones and as usual I prefer the lighter version. The basic difference is the use or lack of use of eggs.

Fashion and Shopping
In the About of this blog I have mentioned that apart from good cooks and bakers we are also dedicated shoppers. This post has nothing to do with food recipes. I have decided to also start posting my shopping findings :-)
I was walking around town yesterday and a random lady stopped me to ask where I got my boots from. To her disappointment I had bought my boots in a different country. This has happened before in many occasions but it was the first time that someone continued the conversation to ask me whether I had a blog or somewhere I post my fashion buys as she thought my style was inspirational. I love shopping and when I want to buy something I have to look into every store until I find that special something that is a bit different and fashion forward.
When I was in Greece in July I went shopping with my aunt. One of my purchases was this amazing clutch! It is from a Greek brand similar to accessorize called 'axel accessories'. I haven't carried it yet as I am looking for the perfect occasion.
Checking online I noticed that you can still buy it and as sales are not over in Greece it only costs 23 euros! You can find it here
What I love about it is that it is mixture of glamour, roughness and femininity. Ok not only for that reason. It also features three of my favourite colours fuchsia, white and black!
I strongly encourage you to take a look at their website as their accessories rock ;-)

Delicious Zucchini Burgers ~ Κολοκυθοκεφτέδες της Μανούλας Ναυσικάς!
Not a fan of zucchini? Well this is the perfect recipe for you!
No I am not playing games as this recipe has been adored by people that really love, don't really care about or hate zucchini! It's my mum's recipe and it has become one of her five star side dishes accompanying almost every summer dinner. I personally love zucchini but I have to admit that in this recipe you don't taste it all. Nevertheless it's one of my favourite recipes and when we have left overs from dinner I keep eating them as snacks. It's one of those types of food that you know you can never have cooked too many of them. Even if you have twenty as leftovers it's guaranteed that they won't last for more than 20 hours.
It's a relatively easy recipe and the only hassle is the grating of the zucchini. I highly encourage you to try it!
Ingredients:
4 zucchinis
3 eggs
1 cup flour (it might need a bit less or a bit more)
1 medium onion
3 spring onions
2 tbsp chopped dill
2 tbsp chopped mint
1 cup variety of grated salty cheeses
Salt, pepper, olive oil
Oil for frying
We grate the zucchinis and we let them aside for half an hour. We chop the onions and spring onions in small pieces and we sauté them in a pan with two tbsp of olive oil over medium heat. We put them aside and let them cool down.
In a bowl we beat the eggs and slowly slowly add the flour until we get a thick yet runny mixture. We squeeze the grated zucchini and add it in the mixture. We continue adding all the ingredients one by one adding salt and pepper at the end. The aim is to end up with a think mixture. If the mixture is runny we add dried breadcrumbs.
In a pan we add frying oil and we let it heat up well. When it is ready with a spoon we take some of our mixture, pour it in the oil and fry it without to forgetting to turn them occasionally. Once the first burgers are in the pan we reduce the heat to medium-hot as we want the burgers to be well cooked on the inside without risking burning their outside.
Serving suggestion: the zucchini Burgers go perfectly with the Greek traditional tzatziki. You can find the recipe here.

My favourite I think is the chestnut one and the second favourite watermelon.
To my surprise my aunt introduced me to a simpler and easier version of a date spoon sweet. Dates are already mature and sweet fruits so they don't need as much time cooking like the rest of the fruit.
Thus this version of a spoon dessert can be prepared as a last minute option.
Ingredients:
125 g brown sugar
250 g dates
1/2 cup cognac
1 cup made strong filtered coffee
We add all the ingredients in a small pan and we bring to boil. Once it is boiling we lower the temperature to medium and we let it simmer until it becomes syrupy. While it boils the skin of the dates will start to separate. As it separates we peel it from the dates and remove it. Once it gets syrupy we let it cool down and we serve either with vanilla ice cream or as it is.

Historically Marie biscuit chocolate pudding has come out of the fusion of Sri Lankan and British cuisine. Here I will give you one of the Greek variations. There are a few different ones and as usual I prefer the lighter version. The basic difference is the use or lack of use of eggs.
In Greece even when Greeks don't know how to bake any other dessert they surely can make this one. The recipe below will help you understand why. For this dessert we just have to whisk all the ingredients together without having to use any complicated baking techniques.
Ingredients:
225 g Marie biscuits
250 g dark chocolate
150 g butter
1 cup milk
110 g icing sugar
300 g walnuts
1/4 cup cognac
We heat the milk and remove it from fire before it starts to boil. We add the chocolate and while it melts we keep stirring it until it becomes a well combined mixture. Next we break the biscuits into small pieces and along with the walnuts and cognac we add them in the milk and chocolate mixture.
In the mixer we whisk the butter and sugar until they turn into a fluffy mixture. We add it and keep stirring until it is evenly mixed.
We either roll the pudding into a loaf or we pour it in a silicone mold.
Let the pudding cool in the fridge for a couple of hours and serve it after cutting it in slices.
Variations:
Depending on what ingredients we like we can substitute the walnuts with other nuts, dried fruit or even coconut flakes ;-)
Moreover we can decorate it accordingly depending on the theme of the party or gathering we have prepared it for!
